PANCAKE

Every now and then, will make pancake for breakfast but usually at weekend.

The recipe is simple and easy to make:

Ingredient:

1 egg
2 tbsp sugar
a pinch of salt
230g milk
2 tbsp. oil
250gram of plain flour
2 tsp baking powder

Method:

1 Shift the flour and baking powder and set aside
2 Mix the milk, oil and egg
3 Add sugar and salt to the shifted flour
4 Whisk the milk mixture to the flour mixture, mix well
5 Heat up the pan, and scoop a ladle of the mixture
6 Once bubbles is form, can turn the other side for a while
7 Ready to serve

EGG TARTS

Egg tarts is my girl's fav, which sometimes she will request for it.

So let's get down to work:

Ingredient:

Pastry
200g plain flour
70g icing sugar
140g butter (harden butter)
1/2egg (beaten)

Method:

1 Add sugar, flour and butter to form crumb
2 Add in the egg and knead into a dough
3 Refrigerate for 20 min ( use this time to make the egg custard)
4 Once dough is ready, press evenly on the tart mould


Ingredient

Egg custard
2 1/2 egg
80g sugar
165ml water
60ml evaporated milk

Method:

1 Boil water and sugar, til sugar dissolve and leave to cool
2 Once cool, add the rest of the ingredient, whisk to mix well
3 Shift the mixture at least 3 times so that the egg custard will be smooth
4 Pour 80% full on the mould
5 Preheat the oven at 200 deg C for 15-20mins

SALTED EGG COOKIES

Salted Egg make into cookies which is another cookies that make me doubtful? But still decided to give it a go and make a small batch to try whether the taste is acceptable or not.

I gave my colleague to try the cookies, none of them is able to tell what is the main ingredient for this cookies. When I reveal to them, then they will able to find the salted egg smell.

So let's get down to baking:

Ingredient:
250g plain flour
20g corn flour
1/4 tsp baking powder
4 cooked salted egg yolk (smashed)
170g butter
80g sugar

glaze: milk

Method:

1 Shift plain flour, corn flour, baking powder and set aside
2 Cream butter, sugar til light in colour
3 Add in the smashed egg yolks
4 Fold in the shifted flour to the mixture to form soft and pliable dough (if too soft, place it in the fridge for 30min)
5 Preheat the oven 170 deg C, mould the cookies using your desirable cookie cutter
6 Glaze the cookies and bake for 18 min (according to my oven)

PEANUT PUFF

This is my hubby's fav, peanut puff, each year he will buy a small bottle for himself, but this year he asked whether I will be making this snack or not. As per his request, I will make more this year.

Simple and easy to mould but I dun like to fry but luckily I bought a deep fryer which had help me.

Ingredient:

Dough
300g plain flour
70g oil (unflavour)
120g water

Filling
100g peanuts
3tbsp roasted sesame seed
60g sugar

Method:

1 Combine flour and oil to form crumble, add in water and knead to form soft dough
2 I weigh each dough 5g, roll it into a ball and flatten
3 Fill the flatten dough with the filling (just enough to get seal)
4 Deep fry til golden brown

POTATOES CHIP COOKIES

When I came across this cookies, I really had doubt how does it really taste like, Potatoes chip cookies? make me wonder?

Finally, decide to try this simple recipe, to my surprise it smells really nice when the cookies is baking. My hubby likes this cookies.

So let's get baking

Ingredient
250g butter
70g fine sugar
150g sour and cream potatoes chip
250g plain flour
1 tsp baking powder

Method:

1 Cream butter and sugar til light and fluffy
2 Stir in crushed potatoes chips
3 Fold in the shifted four with the baking powder, mix into a dough
4 I used two teaspoon to scoop and drop the mixture onto a baking mat
5 Preheat the oven 180 deg C and bake for 15 min.

ROSE PINEAPPLE TART

Pineapple tarts is a must for CNY, so decided to make some rose pineapple tarts.

This is the best liked recipe for the dough as commented by family members and friends, for this recipe is a keeper for myself.

The dough is easy to manage and tweet the shape of the rose.

Here let get started:

Ingredient:
175g butter
50g condensed milk
235g plain flour
1 egg yolk

300g pineapple jam (homemade or store bought)

Method:
1 Cream butter and condensed milk til light yellow
2 Add in egg yolk, and beat til combine
3 Mix in the shifted flour, mix til mixture is soft and not sticky
4 Roll the pineapple jam 6g each, as for the dough is 10g each
5 Flatten the dough slightly, pinch the side to be flatter than the middle so that the seal part will almost the same thickness through out.
6 Wrap the pineapple jam in the middle of the dough and wrap it up
7 Used a tweeter to create the rose, brush milk
8 Preheat the oven to 170 deg C for 23 min (accordingly to my oven)
9 Cool completely before storing
